Stir fried Vegetables

This week’s produce update includes a farm fresh range of crispy vegetables to create a fast, healthy and beautifully stir fry. One of the things I like to do is to spice my stir fry’s up, depending on the flavours I feel like enjoying that particular night. Try a combination of chilli, pepper and curry with added egg for a Singapore style stir fry, use black bean, mushrooms and soy for a Chinese style dish and for a Thai style – add finely grated lemon grass, lime leaves and a spice combination of coriander, cumin and peppercorns (finely crushed/blended) and added to the vegetables and fried through towards the end of cooking. Of course you can also add Pork, Beef or Chicken to create a delicious meal in one. Three very different flavours to transport you all over the globe with the very same vegetables!

  • 1 bunch of fresh roughly diced local Pak Choy

  • 1 bunch of fresh roughly diced local Chinese Broccoli

  • 1 bunch of fresh locally grown Spring Onions (or 1 med red Onion)

  • 1 Bunch fresh locally grown Coriander

  • 1 Red Capsicum or Red Cabbage for colour

  • 2 cloves fresh Australian Garlic – peeled and finely chopped/crushed

  • 1 Thumb size piece of fresh Australian Ginger

  • 1 Tablespoon Australian Extra Virgin Olive Oil (or coconut oil also works so well here)

  • 1 teaspoon Soy Sauce (and/or oyster/fish/shrimp sauce if preferred)

  • 1 fresh red Chilli (optional)

  • 1/2 teaspoon fresh lemon or lime juice

  • Roughly chop the Asian Vegetables and separate the harder stems from the leaves. Finely chop the Coriander stems and roots, Onion, Garlic, Chilli and Ginger

  • In a hot pan/wok, add the coconut oil and fry the Vegetables, Coriander stems, Garlic and the Ginger until tender. Add the Asian Vegetable tops and ½ of the Coriander leaves last and fry until just tender. 

  • Finish with lemon Juice and Sauce to taste. Serve immediately and garnish with fresh Coriander leaves. This dish is a perfect accompaniment as a base for Fish, Beef, Chicken or Pork.
