Avocado and Tomato Soup

No Cook Avocado and Tomato Soup. Even though the days are hot, you don’t have to give up eating your favourite soups. A cold Barcelona style soup is ideal for a hot summer or autumn day.

INGREDIENTS
  • 6 large local tomatoes

  • 2 avocado, peeled, stone removed and diced

  • 2 fresh corn (cooked and kernels removed)

  • 2 tomatoes, diced

  • handful chopped fresh coriander leaves

  • 1 tablespoon lemon juice

  • salt and freshly ground black pepper to taste

GUIDE / INSTRUCTIONS
  • Puree the tomatoes in a blender or food processor.

  • In a medium bowl, combine the tomato juice, avocado sweetcorn, diced tomatoes, coriander and lemon juice.

  • Season to taste with salt and pepper. Transfer to serving bowls.
