This week’s Summer recipe inspiration is grilled apricots and nectarines on the BBQ (strawberries and peaches are also great grilled) – it really does bring out the flavors and is a great compliment to BBQ meats, zucchini, asparagus, and other BBQ roasted vegetables. Baste them while grilling with mixed olive oil and balsamic for an extra bit of zing!
INGREDIENTS
4 – 6 Nectarines, halved and stones removed
4 – 6 Apricots, halved and stones removed
a handful fresh local farms mint
Juice of 1 lemon
¼ cup pumpkin seeds (any seeds /roasted nuts will do)
3 handfuls of salad greens (baby spinach and rocket in this recipe)
Olive Oil
Feta Cheese to finish
8 slices prosciutto/ham if you’d like a quick and easy weeknight meal in one and are not adding any BBQ meats
GUIDE / INSTRUCTIONS
Grill fruit cut side down on the BBQ or stove top grilling pan for 5 minutes until they have softened and are smelling amazing! On a serving platter place the greens, then BBQ meats or prosciutto slices, grilled fruit and top with pumpkin seeds/nuts and mint leaves.
Squeeze over lemon and drizzle some organic yogurt…so yummy. Refrigerate until ready to serve…get ready for the applause!
