This week’s recipe idea is inspired by my love for delicious farm fresh vegetables, Cuban drinks, The flavours of Bruschetta and cooking on the BBQ.

GUIDE / INSTRUCTIONS
  • Grilled vegetables such as Eggplant, Zucchini, Asparagus and Broccolini on the BBQ are just magnificent. On their own (with a basting of balsamic, olive oil and pepper/salt to taste) they are good but take your BBQ veg to a new level with a marinade inspired by the gorgeous flavour of Bruschetta.  See the recipe below and feel free to experiment with other ingredients. Add a delicious icy cold fresh mint Mojito and it’s a happy and memorable experience.

  • Bruschetta inspired vegetable Marinade – Combine one ripe tomato, 5 – 6 sprigs of fresh local Basil, a dash of balsamic (or red wine vinegar) and some olive oil  – add a few peeled garlic cloves and salt and pepper to taste. Add some fresh Capsicum too if you like. Combine well in a blender or bullet and use as a marinade for 20 min prior to cooking or as a basting on the BBQ. This basting is also delicious with mixed vegetable, fish and chicken kebabs.
