Braised red cabbage

INGREDIENTS
  • 55g (1/2 cup) walnut halves, coarsely chopped

  • 50g butter

  • 1 brown onion, halved, thinly sliced

  • 1/2 large (1 kg) red cabbage, finely shredded

  • 125ml (1/2 cup) apple juice

  • 1 tablespoon red wine vinegar

  • 1 dried bay leaf

  • 2 apples, peeled, cored, coarsely grated

  • Salt & freshly ground black pepper

GUIDE / INSTRUCTIONS
  • Heat a small frying pan over medium heat. Add the walnuts and cook, stirring, for 5 minutes or until lightly toasted. Remove from heat and set aside.Melt the butter in a large saucepan over high heat until foaming. Add the onion and cook, stirring, for 5 minutes or until soft.

  • Add the cabbage and cook, stirring, for 1 minute or until just tender. Add the apple juice, vinegar and bay leaf. Reduce heat to low and cook, covered, stirring occasionally, for 30 minutes or until cabbage is tender.

  • Add the apple and cook, stirring, for 5 minutes or until heated through. Taste and season with salt and pepper. Spoon cabbage mixture into a serving dish. Sprinkle with walnuts to serve.This dish is great with a nice pork roast or pork sausage…enjoy
