INGREDIENTS
55g (1/2 cup) walnut halves, coarsely chopped
50g butter
1 brown onion, halved, thinly sliced
1/2 large (1 kg) red cabbage, finely shredded
125ml (1/2 cup) apple juice
1 tablespoon red wine vinegar
1 dried bay leaf
2 apples, peeled, cored, coarsely grated
Salt & freshly ground black pepper
GUIDE / INSTRUCTIONS
Heat a small frying pan over medium heat. Add the walnuts and cook, stirring, for 5 minutes or until lightly toasted. Remove from heat and set aside.Melt the butter in a large saucepan over high heat until foaming. Add the onion and cook, stirring, for 5 minutes or until soft.
Add the cabbage and cook, stirring, for 1 minute or until just tender. Add the apple juice, vinegar and bay leaf. Reduce heat to low and cook, covered, stirring occasionally, for 30 minutes or until cabbage is tender.
Add the apple and cook, stirring, for 5 minutes or until heated through. Taste and season with salt and pepper. Spoon cabbage mixture into a serving dish. Sprinkle with walnuts to serve.This dish is great with a nice pork roast or pork sausage…enjoy
