This week’s food inspiration is one of my favourite things to do with oats, honey, apple, pear and strawberries. Yep you may have guessed it – Apple and Fruit Crumble. I love it so much as its equally good hot or cold. Its also lasts for ages in the fridge, so double the quantities and have a healthy breakfast, mid morning or afternoon snack ready to go for during the week. It’s also great as a school recess snack for kids – healthy, filling and nutritious and even better with some yoghurt!

INGREDIENTS
  • 2 medium apples, peeled, cored and diced

  • 2 medium pears, peeled, cored and diced

  • 150 – 250 g strawberries, trimmed and diced (use berries if you like instead) – optional

  • 2 teaspoons lemon juice

  • 1 tablespoon honey

  • 1/3 cup water

THE CRUMBLE MAKING
  • 1/3 cup plain flour ( I like using almond or corn flour (GF))

  • 1/3 cup local honey

  • 1/2 cup rolled oats ( increase to a cup if you love a good crust like I do!)

  • 80g unsalted fresh butter, chopped

  • Ice-cream, yoghurt or cream, to serve

GUIDE / INSTRUCTIONS
  • Preheat oven to 180C/160C fan-forced. Combine fruit, juice, honey and water in small saucepan over low-medium heat. Cook, stirring for 3-4 minutes or until fruit is slightly softened.

  • To make the crumble, combine the flour, honey, oats and butter in a bowl. Use your fingertips to rub the butter into the flour mixture until the mixture resembles breadcrumbs.

  • Transfer fruit into a large ovenproof dish, draining off some of the liquid. Sprinkle crumble mixture over the fruit and bake in oven for 20-25 minutes or until golden and toasty!. Serve warm with Ice-cream, yoghurt or cream and a sprig of fresh mint!
