Enjoy this utterly irresistible, delicious and fast to make fruit dessert, especially good with juicy and fresh new season apples.  It’s one of my favourites!

  • 250g strawberries, trimmed, halved

  • 2-3 stone fruit, diced or quartered

  • 2 -3 apples – green or new season reds – fresh and juicy, diced or quartered

  • 2 tablespoons caster sugar

  • 1/2 cup plain flour

  • 35g butter

  • 3 tablespoons flaked almonds

  • Organic Vanilla yogurt or Vanilla ice cream, to serve

  • Preheat oven to 220C/200C fan-forced. Lightly grease a 20cm x 30cm roasting pan. Add fruit and half the sugar. Toss to coat.

  • Combine flour and remaining sugar in a medium bowl. Add butter. Using fingertips, rub butter into flour mixture until mixture resembles breadcrumbs. 

  • Add almonds. Stir to combine. Sprinkle over fruit mixture, pressing dough together with fingers to make small lumps.

  • Bake for 15 minutes or until top and almonds are golden and crisp. Serve with vanilla yogurt or ice cream…yumm!
