Full Recipe in Details

  • 1 cups kale – tuscan or green is fine

  • 2 cups Savage baby spinach.

  • 3 cups green or mixed lettuce.

  • 2 tablespoons fresh Butlers mint, thinly sliced.

  • 1 – 2 fennel bulbs (1 cup) thinly sliced horizontally to the root.

  • 1/2 avocado, thinly sliced. – optional if in season

  • 2 blood oranges, peeled, segmented slices, juice squeezed and reserved from leftover pulp.

  • Combine and layer all ingredients as per the photo.

  • Add your favourite dressing and enjoy! If you like add in some tasty prosciutto or smoked salmon, with a warm crusty sourdough loaf on the side, for a meal in one.
