Asparagus with Lemon

This weeks feature item is fresh new season Asparagus, sourced from our local Farms, in the beautiful Koo Wee Rup golden triangle in Gippsland. This region is so amazing for growing Asparagus that over 90% of all of the Asparagus grow in the whole of Australia is grown right here on our doorstep – that’s pretty exciting! Do try this great recipe below, with your local asparagus. Perfect for the BBQ or as a quick pan fry during the week. I am sure everyone will love the freshness and flavour, and how good it is for you!

INGREDIENTS
  • 1 fresh lemon

  • 2 tablespoons extra virgin olive oil

  • 2 – 4 bunches asparagus, woody ends trimmed (trim around 2 cm)

  • 100 g marinated feta cheese, crumbled

  • 1/2 cup small mint leaves

  • 25 g (1/4 cup) flaked or crushed almonds, toasted (try roasted pine nuts or walnuts)

  • Add some baby broccoli as well to make this a mix of delicious greens.

GUIDE / INSTRUCTIONS
  • Preheat a barbecue or char grill pan on medium heat. Use a grater to remove rind from lemon. (Alternatively, using a vegetable peeler, peel rind from lemon. Cut rind into thin strips.) Juice the lemon.

  • Whisk lemon juice and 1 1/2 tablespoons of the oil in a small jug. Season well with salt and pepper. Drizzle remaining oil over asparagus. Cook asparagus on the grill, turning, for 3 minutes or until bright green, tender-crisp and slightly charred.

  • Transfer to a serving platter. Drizzle over lemon dressing. Sprinkle with lemon zest, feta, mint and, roasted almonds. Serve immediately or allow to cool for a salad the next day.
