Lamb or beef noodles and peanut salad

You want it quick and healthy and with a bit of a kick … This is the perfect recipe for you. Who doesn’t like a bowl full of noodles and heartiness. Serves 4-5.

INGREDIENTS
  • 200g vermicelli or glass noodles

  • 1 tablespoon fresh or (chilli) oil (optional)

  • 1 clove garlic, chopped

  • 500g tender lamb or beef strips

  • 150g snow peas, shredded

  • 1 capsicum, sliced

  • 3 tablespoons soy sauce

  • 2 tablespoons sweet chilli sauce

  • 1/4 cup coriander leaves

  • 1/2 cup roasted unsalted peanuts, roughly chopped

GUIDE / INSTRUCTIONS
  • Prepare noodles per packet instructions. Heat the chilli oil or olive oil and add some chilli flakes in a wok or frying pan over high heat. Add the garlic and cook for 30 second.

  • Add the lamb or beef and stir fry for 3 minutes or until sealed. Add the snow peas and caps and stir fry for 2 minus. Then add the soy sauce and sweet chilli and remove from the heat.

  • Toss the stir fry with the noodles, coriander leaves and peanuts. Place onto serving plates and serve with wedges of lime and yogurt if you like.
