Lamb or beef noodles and peanut salad

You want it quick and healthy and with a bit of a kick … This is the perfect recipe for you. Who doesn’t like a bowl full of noodles and heartiness. Serves 4-5.

200g vermicelli or glass noodles
1 tablespoon fresh or (chilli) oil (optional)
1 clove garlic, chopped
500g tender lamb or beef strips
150g snow peas, shredded
1 capsicum, sliced
3 tablespoons soy sauce
2 tablespoons sweet chilli sauce
1/4 cup coriander leaves
1/2 cup roasted unsalted peanuts, roughly chopped

Prepare noodles per packet instructions. Heat the chilli oil or olive oil and add some chilli flakes in a wok or frying pan over high heat. Add the garlic and cook for 30 second. Add the lamb or beef and stir fry for 3 minutes or until sealed. Add the snow peas and caps and stir fry for 2 minus. Then add the soy sauce and sweet chilli and remove from the heat. Toss the stir fry with the noodles, coriander leaves and peanuts. Place onto serving plates and serve with wedges of lime and yogurt if you like. from Marie Claire, Thank you.
